Antep pistachios are rich in oil, so light, heat and moisture affect them. Stored the wrong way, they soften or turn bitter quickly. Here are five tips to keep them fresh:
1. Keep the air out
After opening the pack, move the pistachios to a glass jar or a resealable bag. Contact with air speeds up oxidation.
2. Choose a cool, dark place
Cupboards near the hob or oven are not ideal. Use a pantry or a cupboard that gets no sunlight.
3. Refrigerate for longer storage
If you will keep them for more than a month, the fridge is ideal. For kernels and ground pistachios, the fridge is almost a must.
4. The freezer is an option too
In-shell pistachios keep for up to a year in the freezer. Just let them come to room temperature before eating.
5. Keep them away from moisture
Pistachios lose their crunch when they absorb moisture. If they have softened, a 5–6 minute stay in a 150 °C oven brings them back.
